This black bean corn and avocado salad is a crowd pleaser, colorful and full of nutrition. This salad is great served as an entree, side or even a delicious salsa.
19 oz can black beans drained and rinsed
1 Cup JJS OWN Cilantro Lime Vinaigrette
10 oz can corn kernels drained
2 cups tomatoes chopped
1 avocado chopped
1/4 cup cilantro chopped
4 green onions chopped
salt and pepper to taste
To a large bowl add the black beans, corn kernels, chopped tomatoes, avocado, JJS OWN Cilantro Lime Vinaigrette, cilantro and green onions.
Salt & Pepper to taste toss everything together.
Serve with tortilla chips.
